Honey
Choosing Kashmiri honey
All three of our honeys are raw and unheated. They differ in the flowers the bees fed on.
The three honeys
- Apple blossom: light and floral, from orchards in spring bloom.
- Acacia: pale and mild, and it stays liquid longer than most honey.
- Sulai: a wild forest honey with a fuller taste. It often sets white and creamy.
Why raw honey crystallises
Crystals are natural sugar forming in honey that hasn't been heated or filtered hard. To soften it, stand the jar in warm (not hot) water for a while.
